  • ½ cup vegetable oil (or melted butter)
  • 2 tsp vanilla extract
  • 1 tsp peppermint extract
  • 3 cups powdered sugar
  • ½ cup unsalted butter (softened)
  • 1 tsp peppermint extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans with nonstick spray and line with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt until fully combined.
  3. In another bowl, combine sugar, eggs, vegetable oil, milk, vanilla extract, and peppermint extract. Whisk until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until just combined. Avoid overmixing to maintain a fluffy texture.
  5. Divide the batter evenly between the prepared pans. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow cakes to cool in pans for about ten minutes before transferring them to wire racks to cool completely.
  7. In a mixing bowl, beat together softened butter and powdered sugar until creamy. Add peppermint extract and mix until fluffy.
  8. Once the cakes are completely cooled, spread frosting generously between layers and on top of the cake.
