Instructions
- Preheat your oven to 350°F (175°C). Grease two round cake pans with nonstick spray and line with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt until fully combined.
- In another bowl, combine sugar, eggs, vegetable oil, milk, vanilla extract, and peppermint extract. Whisk until smooth.
- Pour the wet mixture into the dry ingredients and mix until just combined. Avoid overmixing to maintain a fluffy texture.
- Divide the batter evenly between the prepared pans. Bake for about 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in pans for about ten minutes before transferring them to wire racks to cool completely.
- In a mixing bowl, beat together softened butter and powdered sugar until creamy. Add peppermint extract and mix until fluffy.
- Once the cakes are completely cooled, spread frosting generously between layers and on top of the cake.
