Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk (or milk alternative)
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup unsalted butter, room temperature
  • 2 tbsp instant coffee granules
  • 2 cups confectioners' sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a large bowl, whisk together all-purpose flour, cocoa powder, baking powder, and granulated sugar until well combined.
  3. In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix just until combined.
  5. Spoon the batter into each cupcake liner until they are about two-thirds full.
  6. Bake for 18–20 minutes or until a toothpick inserted into one comes out clean.
  7. Allow cupcakes to cool on a wire rack.
  8. In a mixing bowl, blend unsalted butter until creamy.
  9. Dissolve instant coffee granules in a small amount of warm water and add to the butter.
  10. Gradually add confectioners' sugar and mix until light and fluffy.
  11. Once cupcakes are completely cooled, generously frost them with the coffee frosting.
