- ½ cup unsalted butter, room temperature
- 2 tbsp instant coffee granules
- 2 cups confectioners' sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
- In a large bowl, whisk together all-purpose flour, cocoa powder, baking powder, and granulated sugar until well combined.
- In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix just until combined.
- Spoon the batter into each cupcake liner until they are about two-thirds full.
- Bake for 18–20 minutes or until a toothpick inserted into one comes out clean.
- Allow cupcakes to cool on a wire rack.
- In a mixing bowl, blend unsalted butter until creamy.
- Dissolve instant coffee granules in a small amount of warm water and add to the butter.
- Gradually add confectioners' sugar and mix until light and fluffy.
- Once cupcakes are completely cooled, generously frost them with the coffee frosting.
