- Grate the Zucchini: Using a box grater or food processor, shred the zucchinis until you have about two cups. Squeeze out excess moisture using a clean kitchen towel.
- Mix Wet Ingredients: In a large bowl, whisk together the eggs, granulated sugar, vegetable oil, and vanilla extract until well combined.
- Combine Dry Ingredients: In another bowl, mix the flour, baking soda, salt, cinnamon, and half of the chocolate chips until evenly distributed.
