Instructions

  1. Preheat Your Oven: Preheat your oven to 350°F (175°C). Grease a loaf pan with nonstick cooking spray or line it with parchment paper.
  2. Grate the Zucchini: Using a box grater or food processor, shred the zucchinis until you have about two cups. Squeeze out excess moisture using a clean kitchen towel.
  3. Mix Wet Ingredients: In a large bowl, whisk together the eggs, granulated sugar, vegetable oil, and vanilla extract until well combined.
  4. Combine Dry Ingredients: In another bowl, mix the flour, baking soda, salt, cinnamon, and half of the chocolate chips until evenly distributed.
  5. Fold Mixtures Together: Gently fold the dry mixture into the wet ingredients until just combined. Add in the grated zucchini and remaining chocolate chips while being careful not to overmix.
