Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt until well combined.
- In a large mixing bowl, use an electric mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about three minutes).
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.
- Gently fold in the dried cherries and chocolate chips until evenly distributed throughout the dough.
- Drop tablespoon-sized balls of dough onto prepared baking sheets about two inches apart. Bake for about 10 to 12 minutes or until edges are set while centers remain soft.
- Transfer cookies to plates or wire racks to cool slightly before serving warm.
