- 3–4 boneless, skinless chicken breasts
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp extra virgin olive oil
- 12 oz penne or fettuccine
- 24 oz marinara sauce (no added sugars)
- 3 cloves garlic, minced
- 1 tsp sugar
- 8 oz fresh mozzarella cheese, sliced
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat the oven to 375°F (190°C).
- Season chicken breasts with salt, pepper, and Italian seasoning.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Sear chicken for about 4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for about 20 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest before slicing.
- While chicken bakes, bring a large pot of salted water to boil.
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a saucepan over medium heat, combine marinara sauce with minced garlic and sugar. Stir occasionally and let simmer for about 5 minutes until heated through.
- In the large skillet with sliced chicken, add cooked pasta and marinara sauce. Toss gently to coat evenly.
- Top with mozzarella slices and grated Parmesan cheese.
- Return to the oven for about 5 minutes or until cheese is bubbly and golden.
