Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp extra virgin olive oil
  • 12 oz penne or fettuccine
  • 24 oz marinara sauce (no added sugars)
  • 3 cloves garlic, minced
  • 1 tsp sugar
  • 8 oz fresh mozzarella cheese, sliced
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season chicken breasts with salt, pepper, and Italian seasoning.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Sear chicken for about 4 minutes on each side until golden brown.
  4. Transfer the skillet to the preheated oven and bake for about 20 minutes or until chicken reaches an internal temperature of 165°F (74°C). Let rest before slicing.
  5. While chicken bakes, bring a large pot of salted water to boil.
  6. Cook pasta according to package instructions until al dente. Drain and set aside.
  7. In a saucepan over medium heat, combine marinara sauce with minced garlic and sugar. Stir occasionally and let simmer for about 5 minutes until heated through.
  8. In the large skillet with sliced chicken, add cooked pasta and marinara sauce. Toss gently to coat evenly.
  9. Top with mozzarella slices and grated Parmesan cheese.
  10. Return to the oven for about 5 minutes or until cheese is bubbly and golden.
