- 1 tbsp olive oil
- 3–4 boneless, skinless chicken breasts
- 2 cloves fresh garlic, minced
- 1 tbsp olive oil
- Salt and pepper to taste
- 1/2 cup cranberry sauce (homemade or store-bought)
- 1 tbsp low-sodium soy sauce
- 1 tbsp Dijon mustard
- 1 cup shredded mozzarella cheese
- 1 cup fresh spinach leaves
Instructions
- In a large bowl, dissolve yeast in warm water. Let sit for about 5 minutes until frothy.
- Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
- Knead on a floured surface for about 5 minutes until smooth. Place in an oiled bowl, cover with a towel, and let rise in a warm place for about an hour or until doubled.
- Preheat your oven to 450°F (232°C).
- In a bowl, mix olive oil with minced garlic. Coat chicken breasts with this mixture, seasoning with salt and pepper.
- Heat a skillet over medium heat and cook chicken for about 6-7 minutes per side until golden brown. Remove from heat and let rest before slicing.
- Roll out the dough on a floured surface to your desired thickness.
- Spread cranberry sauce evenly over the dough.
- Top with sliced chicken, shredded mozzarella cheese, and fresh spinach leaves.
- Bake in the preheated oven for about 12-15 minutes or until cheese is bubbly and golden brown.
