  • 3/4 cup warm water (about 110°F)
  • 1 tsp salt
  • 1 tbsp olive oil
  • 34 boneless, skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1/2 cup cranberry sauce (homemade or store-bought)
  • 1 tbsp low-sodium soy sauce
  • 1 tbsp Dijon mustard
  • 1 cup shredded mozzarella cheese
  • 1 cup fresh spinach leaves

Instructions

  1. In a large bowl, dissolve yeast in warm water. Let sit for about 5 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead on a floured surface for about 5 minutes until smooth. Place in an oiled bowl, cover with a towel, and let rise in a warm place for about an hour or until doubled.
  4. Preheat your oven to 450°F (232°C).
  5. In a bowl, mix olive oil with minced garlic. Coat chicken breasts with this mixture, seasoning with salt and pepper.
  6. Heat a skillet over medium heat and cook chicken for about 6-7 minutes per side until golden brown. Remove from heat and let rest before slicing.
  7. Roll out the dough on a floured surface to your desired thickness.
  8. Spread cranberry sauce evenly over the dough.
  9. Top with sliced chicken, shredded mozzarella cheese, and fresh spinach leaves.
  10. Bake in the preheated oven for about 12-15 minutes or until cheese is bubbly and golden brown.
