Ingredients

  • 1 cup crushed shortbread cookies
  • 4 tablespoons unsalted butter, melted
  • 2 cups fresh cherries, pitted and quartered
  • 1/2 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix crushed shortbread cookies with melted butter until crumbly.
  3. Press the mixture firmly into the bottom of a serving dish.
  4. Bake for 10 minutes, then let it cool completely.
  5. Combine quartered cherries and granulated sugar in a large bowl. Let sit for 15 minutes to release juices.
  6. In another bowl, whip heavy cream with vanilla extract until soft peaks form.
  7. Gently fold the whipped cream into the cherry mixture until well combined.
  8. Spread the cherry-cream filling evenly over the cooled crust.
  9. Chill in the refrigerator for at least one hour before serving.
  10. Dust with powdered sugar just before serving for an elegant touch.
