  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. In another bowl, beat eggs with vegetable oil until smooth. Stir in grated carrots and nuts if using.
  4. Gradually mix dry ingredients into the wet mixture until just combined; lumps are okay.
  5. Divide batter between the pans and bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  6. While cooling, prepare the frosting by beating cream cheese with powdered sugar and vanilla until smooth.
  7. Once cakes are cool, layer with frosting in between and on top.
