- 1 cup popcorn kernels (or pre-popped popcorn)
- 1 cup granulated sugar
- ½ cup unsalted butter
- ½ cup light corn syrup
- 1 tsp vanilla extract
- 1 cup crushed candy canes
- ½ cup festive sprinkles (for decoration)
Instructions
- If using popcorn kernels, pop them according to package instructions. If using pre-popped popcorn, skip this step.
- In a saucepan over medium heat, combine the granulated sugar, unsalted butter, light corn syrup, and vanilla extract. Stir continuously until the mixture bubbles and turns golden brown.
- In a large mixing bowl, pour the freshly popped popcorn. Drizzle the warm caramel over it while gently tossing to coat each kernel evenly.
- While still warm and sticky, sprinkle in the crushed candy canes. Toss again to ensure even distribution of peppermint.
- Spread the mixture onto parchment paper-lined baking sheets in an even layer. Allow to cool completely so that it hardens into clusters.
- Once cooled, break apart any large chunks. Transfer to serving bowls or airtight containers for storage.
