Ingredients

  • 12 ounces ziti pasta
  • 4 cups fresh spinach (or 2 cups frozen spinach)
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese (divided)
  • 24 ounces marinara sauce
  • 2 minced garlic cloves

Instructions

  1. Preheat your oven to 375°F (190°C). Cook the ziti pasta according to package instructions until al dente; avoid overcooking.
  2. In a large skillet over medium heat, add a splash of olive oil and minced garlic. Sauté until fragrant, then add spinach and cook until wilted.
  3. In a large bowl, combine cooked ziti, sautéed spinach, ricotta cheese, and half of the mozzarella. Pour in half of the marinara sauce and mix well.
  4. Spread half of the remaining marinara sauce at the bottom of a greased baking dish. Layer the ziti mixture on top, pour over the rest of the sauce, and sprinkle with remaining mozzarella.
  5. Cover with aluminum foil and bake for about 25 minutes. Remove foil and bake for an additional 10 minutes until golden.
  6. Let cool slightly before serving warm, garnished with extra cheese or fresh basil if desired.
