  • 2 medium Granny Smith apples, diced
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 4 cups chicken broth
  • 1 lb Italian sausage (mild or spicy)
  • Fresh herbs: thyme, sage, and parsley to taste
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the sausage until browned. Break it into crumbles while cooking. Once done, remove from heat and set aside.
  3. In the same skillet, add a drizzle of olive oil if needed. Add chopped onions and celery; sauté until softened (about 5 minutes).
  4. Stir in diced apples and cook for an additional 3 minutes until they soften slightly.
  5. In a large bowl, mix together the cubed bread, cooked sausage, sautéed vegetables, herbs, salt, and pepper. Gradually pour in the chicken broth while gently stirring until well combined.
  6. Transfer the mixture into a greased baking dish. Cover with aluminum foil and bake for about 30 minutes. Remove the foil and bake for an additional 10 minutes until golden brown on top.
