  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 tsp almond extract
  • 1 cup fresh or thawed frozen cherries, chopped
  • 1/2 cup sliced almonds

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until combined.
  3. In another bowl, mix the milk, eggs, melted butter, and almond extract until smooth.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined; lumps are okay! Fold in the cherries and sliced almonds.
  5. Scoop the batter into prepared muffin tins until they're about two-thirds full. Sprinkle extra sliced almonds on top for added crunch.
  6. Bake in the preheated oven for about 20-25 minutes or until golden brown; a toothpick inserted into the center should come out clean. Let them cool slightly before transferring to a wire rack.
