- 1 cup milk
- 2 large eggs
- 1/2 cup melted butter
- 1 tsp almond extract
- 1 cup fresh or thawed frozen cherries, chopped
- 1/2 cup sliced almonds
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
- In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, and salt until combined.
- In another bowl, mix the milk, eggs, melted butter, and almond extract until smooth.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined; lumps are okay! Fold in the cherries and sliced almonds.
- Scoop the batter into prepared muffin tins until they're about two-thirds full. Sprinkle extra sliced almonds on top for added crunch.
- Bake in the preheated oven for about 20-25 minutes or until golden brown; a toothpick inserted into the center should come out clean. Let them cool slightly before transferring to a wire rack.
