- 1 cup dark chocolate chips
- 1 cup heavy whipping cream (plus an additional cup for topping)
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix crushed graham crackers and melted butter until combined.
- Press the mixture firmly into a pie pan and bake for about 10 minutes, or until lightly golden. Let cool.
- Place dark chocolate chips in a heatproof bowl.
- In a saucepan over low heat, bring 1 cup of heavy whipping cream to a simmer (do not boil).
- Pour the hot cream over the chocolate chips and let sit for 5 minutes. Stir until smooth.
- Whisk in granulated sugar and vanilla extract until fully combined.
- Pour the chocolate filling into the cooled crust, smoothing out the top with a spatula.
- Refrigerate for at least three hours (or overnight).
- Once set, whip the additional cup of heavy whipping cream until soft peaks form.
