- 1 cup granulated sugar
- 1/2 cup brown sugar
- 4 large eggs
- 2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- Pinch of salt
- 3/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 1 tsp peppermint extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
- In a large bowl, beat together softened butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
- Add flour, cocoa powder, baking powder, and salt; mix until just combined. Pour half of the batter into the prepared baking dish.
- In another bowl, cream together softened butter and powdered sugar until light and fluffy.
- Mix in vanilla and peppermint extracts until well blended.
- Spread the peppermint shortbread mixture over the brownie batter evenly.
- Spoon the remaining brownie batter on top and spread gently.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs.
- Allow to cool completely before cutting into bars.
