Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • Pinch of salt
  • 3/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
  2. In a large bowl, beat together softened butter, granulated sugar, brown sugar, eggs, and vanilla extract until smooth.
  3. Add flour, cocoa powder, baking powder, and salt; mix until just combined. Pour half of the batter into the prepared baking dish.
  4. In another bowl, cream together softened butter and powdered sugar until light and fluffy.
  5. Mix in vanilla and peppermint extracts until well blended.
  6. Spread the peppermint shortbread mixture over the brownie batter evenly.
  7. Spoon the remaining brownie batter on top and spread gently.
  8. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with moist crumbs.
  9. Allow to cool completely before cutting into bars.
