Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 cup whole milk
  • 1 cup eggnog (store-bought or homemade)
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a rectangular baking dish.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
  3. In another bowl, beat together eggs, milk, and eggnog until frothy. Pour into dry ingredients and stir gently until just combined.
  4. Pour the batter into the prepared baking dish and smooth out the top. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  5. Allow the cake to cool slightly before using a fork or skewer to poke holes all over the top.
  6. While still warm, pour additional eggnog over the holes, allowing it to soak in completely.
  7. Once the cake is completely cooled, whip heavy cream with powdered sugar until stiff peaks form. Spread over the top of the cake.
  8. Sprinkle ground nutmeg on top as a garnish.
