  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 3/4 cup unsweetened cocoa powder
  • 5 cups confectioners' sugar
  • 1/3 cup milk (or as needed)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two round cake pans (9 inches).
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In another bowl, beat together the sugar and eggs until light and fluffy. Add buttermilk, vegetable oil, and vanilla extract; mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture. Stir gently until no lumps remain; avoid overmixing.
  5. Pour equal amounts of batter into prepared pans. Bake for about 30-35 minutes or until a toothpick inserted comes out clean. Cool completely before frosting.
  6. While cakes cool, beat softened butter with cocoa powder until creamy. Gradually add confectioners’ sugar and milk to achieve desired consistency.
  7. Once cooled, frost between layers and on top of the cake with your luscious chocolate frosting.
