  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add spaghetti or linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.
  2. 2. Prepare the Sauce: While the pasta cooks, cut the ripe avocados in half, remove the pit, and scoop the flesh into a blender or food processor. Add minced garlic, lemon juice, olive oil, and Parmesan cheese.
  3. 3. Blend Until Smooth: Blend all ingredients until you achieve a creamy consistency. If too thick, add reserved pasta cooking water gradually until desired texture is reached.
