- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- 1. Cook the Pasta: Bring a large pot of salted water to a boil. Add spaghetti or linguine and cook according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water, then drain the pasta.
- 2. Prepare the Sauce: While the pasta cooks, cut the ripe avocados in half, remove the pit, and scoop the flesh into a blender or food processor. Add minced garlic, lemon juice, olive oil, and Parmesan cheese.
- 3. Blend Until Smooth: Blend all ingredients until you achieve a creamy consistency. If too thick, add reserved pasta cooking water gradually until desired texture is reached.
- 4. Combine Pasta and Sauce: Return drained pasta to the pot over low heat. Pour in the avocado sauce and toss until every strand is well-coated.
- 5. Adjust Seasoning: Taste and season with salt and pepper as needed. For extra heat, sprinkle in red pepper flakes if desired.
- 6. Serve It Up!: Serve immediately in bowls or plates. Garnish with additional Parmesan cheese or fresh herbs for an appealing presentation.
