- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 ½ cups granulated sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp salt
- 3 large eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup chocolate pudding mix (instant)
- 2 cups whole milk
- 1 cup crushed chocolate cookies or brownies
Instructions
- Preheat your oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until combined.
- In another bowl, beat together eggs, milk, oil, and vanilla extract until well mixed.
- Gradually add the wet mixture to the dry ingredients. Stir until just combined. Pour equal amounts into the prepared cake pans.
- Bake for about 30–35 minutes or until a toothpick inserted comes out clean. Let cool in pans for about ten minutes before transferring to wire racks.
- Prepare the chocolate pudding according to package instructions using whole milk. Let it chill while you work on assembling your cake.
- Place one cooled cake layer on a serving plate. Spread half of the pudding evenly on top.
- Add the second layer and spread remaining pudding over it.
- Generously sprinkle crushed cookies or brownies on top for garnish.
