Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 3 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup chocolate pudding mix (instant)
  • 2 cups whole milk
  • 1 cup crushed chocolate cookies or brownies

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until combined.
  3. In another bowl, beat together eggs, milk, oil, and vanilla extract until well mixed.
  4. Gradually add the wet mixture to the dry ingredients. Stir until just combined. Pour equal amounts into the prepared cake pans.
  5. Bake for about 30–35 minutes or until a toothpick inserted comes out clean. Let cool in pans for about ten minutes before transferring to wire racks.
  6. Prepare the chocolate pudding according to package instructions using whole milk. Let it chill while you work on assembling your cake.
  7. Place one cooled cake layer on a serving plate. Spread half of the pudding evenly on top.
  8. Add the second layer and spread remaining pudding over it.
  9. Generously sprinkle crushed cookies or brownies on top for garnish.
