Ingredients

  • 1 lb large shrimp (deveined)
  • 1 lb dry scallops
  • 4 cloves garlic (minced)
  • 2 tbsp fresh lemon juice
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley (chopped)
  • 2 tbsp fresh thyme (chopped)

Instructions

  1. Rinse shrimp and scallops under cold water and pat dry with paper towels. Mince the garlic and chop the fresh herbs.
  2. In a large skillet, heat the olive oil over medium-high heat until it's sizzling.
  3. Add the minced garlic to the pan and sauté for about one minute until fragrant, being careful not to burn it.
  4. Place shrimp and scallops in the skillet, cooking for about three minutes on each side, or until they are opaque and slightly golden.
  5. Drizzle fresh lemon juice over the seafood and sprinkle with chopped parsley and thyme. Stir to combine flavors.
  6. Transfer seafood to plates or a serving platter. Garnish with additional lemon wedges if desired.
