- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 3/4 cup granulated sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 cup dark chocolate chips
- 2 tbsp butter
Instructions
- Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
- In a bowl, mix together flour, cocoa powder, sugar, baking powder, and salt until well combined.
- In another bowl, whisk eggs and vanilla extract until frothy.
- Gently fold the egg mixture into dry ingredients until just combined. Pour the batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes or until a toothpick inserted comes out clean.
- While the cake is cooling, whip the heavy cream with powdered sugar until soft peaks form.
- Once slightly cooled, invert the cake onto powdered sugar-dusted parchment paper. Carefully peel off the lining and roll it up tightly while still warm.
- Unroll the cake gently, spread whipped cream filling over it, then roll it back up.
- For ganache, heat heavy cream until simmering then pour over dark chocolate chips in a bowl. Let it sit for five minutes and stir until smooth.
- Coat the rolled cake generously with ganache and drizzle any extra on top before serving.
