- 2 fresh lemons (juiced and zested)
- 4 garlic cloves (minced)
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary (chopped)

- 1 pound baby potatoes (halved)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish.
- In a bowl, mix the juice and zest of two lemons, minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper until well blended.
- Place chicken thighs in a zip-top bag or shallow dish. Pour half of the marinade over the chicken, ensuring each piece is coated. Let marinate for 15-30 minutes.
- In a separate bowl, toss halved baby potatoes with the remaining marinade until evenly coated.
- Spread marinated chicken thighs skin-side up in the baking dish with the potatoes. Drizzle any leftover marinade over everything. Roast for about 45 minutes or until golden brown and cooked through.
- Let rest briefly before serving. Drizzle with pan juices for extra flavor.
