  • 4 bone-in, skin-on chicken thighs
  • 2 fresh lemons (juiced and zested)
  • 4 garlic cloves (minced)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh thyme (chopped)
  • 1 pound baby potatoes (halved)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish.
  2. In a bowl, mix the juice and zest of two lemons, minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper until well blended.
  3. Place chicken thighs in a zip-top bag or shallow dish. Pour half of the marinade over the chicken, ensuring each piece is coated. Let marinate for 15-30 minutes.
  4. In a separate bowl, toss halved baby potatoes with the remaining marinade until evenly coated.
  5. Spread marinated chicken thighs skin-side up in the baking dish with the potatoes. Drizzle any leftover marinade over everything. Roast for about 45 minutes or until golden brown and cooked through.
  6. Let rest briefly before serving. Drizzle with pan juices for extra flavor.
