- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 tbsp dried Italian herbs (oregano, basil, thyme)
- Salt and pepper to taste
- 1/4 cup extra virgin olive oil
- 1/2 cup freshly grated Parmesan cheese
- 1.5 lbs small Yukon Gold potatoes, halved or quartered
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish by spraying it with nonstick cooking spray.
- Wash and cut the Yukon Gold potatoes. In a bowl, toss them with olive oil, salt, pepper, and half of the minced garlic.
- Season chicken breasts generously with salt, pepper, dried herbs, and the remaining minced garlic.
- Place seasoned chicken in the center of the baking dish and surround it with the garlicky potatoes.
- Generously sprinkle freshly grated Parmesan cheese over both the chicken and potatoes.
- Bake in the preheated oven for about 30-35 minutes until the chicken reaches an internal temperature of at least 165°F (74°C) and potatoes are fork-tender.
- Transfer to plates and drizzle any leftover juices from the baking dish over each portion before serving.
