Description

Garlic Parmesan Chicken and Potatoes is a delightful dish featuring juicy chicken paired with crispy, garlicky potatoes, perfect for family dinners or cozy nights in.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 tbsp dried Italian herbs (oregano, basil, thyme)
  • Salt and pepper to taste
  • 1/4 cup extra virgin olive oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1.5 lbs small Yukon Gold potatoes, halved or quartered

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish by spraying it with nonstick cooking spray.
  2. Wash and cut the Yukon Gold potatoes. In a bowl, toss them with olive oil, salt, pepper, and half of the minced garlic.
  3. Season chicken breasts generously with salt, pepper, dried herbs, and the remaining minced garlic.
  4. Place seasoned chicken in the center of the baking dish and surround it with the garlicky potatoes.
  5. Generously sprinkle freshly grated Parmesan cheese over both the chicken and potatoes.
  6. Bake in the preheated oven for about 30-35 minutes until the chicken reaches an internal temperature of at least 165°F (74°C) and potatoes are fork-tender.
  7. Transfer to plates and drizzle any leftover juices from the baking dish over each portion before serving.
