- 4 cups water
- 1 tablespoon unsalted butter
- Pinch of salt
- 1 pound shrimp, peeled and deveined
- 2 tablespoons unsalted butter
- 2 teaspoons Cajun seasoning
- 3 cloves garlic, minced
- Juice of half a lemon
Instructions
- In a medium saucepan, bring 4 cups of water to a boil. Add a pinch of salt.
- Stir in 1 cup of grits. Reduce heat to low, cover, and cook for about 20 minutes until creamy, stirring occasionally.
- Once cooked, stir in 1 tablespoon of unsalted butter for added richness.
- While the grits are cooking, melt 2 tablespoons of butter in a large skillet over medium heat.
- Add minced garlic and sauté for about one minute until fragrant.
- Toss in the shrimp seasoned with Cajun seasoning and cook until pink (approximately 3–4 minutes).
- Squeeze fresh lemon juice over the shrimp and stir well to combine.
- Serve creamy grits onto plates and top generously with the flavorful shrimp.
- Garnish with chopped green onions for color before serving.
