Ingredients

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 tablespoon unsalted butter
  • Pinch of salt
  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons unsalted butter
  • 2 teaspoons Cajun seasoning
  • 3 cloves garlic, minced
  • Juice of half a lemon

Instructions

  1. In a medium saucepan, bring 4 cups of water to a boil. Add a pinch of salt.
  2. Stir in 1 cup of grits. Reduce heat to low, cover, and cook for about 20 minutes until creamy, stirring occasionally.
  3. Once cooked, stir in 1 tablespoon of unsalted butter for added richness.
  4. While the grits are cooking, melt 2 tablespoons of butter in a large skillet over medium heat.
  5. Add minced garlic and sauté for about one minute until fragrant.
  6. Toss in the shrimp seasoned with Cajun seasoning and cook until pink (approximately 3–4 minutes).
  7. Squeeze fresh lemon juice over the shrimp and stir well to combine.
  8. Serve creamy grits onto plates and top generously with the flavorful shrimp.
  9. Garnish with chopped green onions for color before serving.
