- 1 lb large shrimp, peeled and deveined
- 2 tbsp Cajun seasoning
- 2 tbsp unsalted butter
- 1/2 cup chicken broth
- 2 tbsp heavy cream
- 3 green onions, chopped
Instructions
- In a medium saucepan, bring chicken broth (or water) to a boil.
- Whisk in stone-ground grits, stirring continuously to prevent lumps.
- Reduce heat to low, cover, and simmer for about 20-25 minutes until creamy.
- Stir in butter and heavy cream; season with salt and pepper.
- In a skillet over medium-high heat, melt butter.
- Add shrimp seasoned with Cajun seasoning; cook until pink, about 3-5 minutes.
- Remove shrimp and set aside.
- In the same skillet, add chicken broth and heavy cream; scrape up any bits from the pan for flavor.
- Return shrimp to the skillet along with chopped green onions; simmer for an additional 2 minutes.
