Ingredients

  • 4 cups chicken broth or water
  • 1 tbsp unsalted butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp unsalted butter
  • 1/2 cup chicken broth
  • 2 tbsp heavy cream
  • 3 green onions, chopped

Instructions

  1. In a medium saucepan, bring chicken broth (or water) to a boil.
  2. Whisk in stone-ground grits, stirring continuously to prevent lumps.
  3. Reduce heat to low, cover, and simmer for about 20-25 minutes until creamy.
  4. Stir in butter and heavy cream; season with salt and pepper.
  5. In a skillet over medium-high heat, melt butter.
  6. Add shrimp seasoned with Cajun seasoning; cook until pink, about 3-5 minutes.
  7. Remove shrimp and set aside.
  8. In the same skillet, add chicken broth and heavy cream; scrape up any bits from the pan for flavor.
  9. Return shrimp to the skillet along with chopped green onions; simmer for an additional 2 minutes.
