Celebrate the New Year with a vibrant seafood dinner featuring succulent shrimp, scallops, and flaky fish, all infused with fresh herbs and zesty lemon.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 lb dry-packed scallops
  • 1 lb cod or haddock fillets, cut into portions
  • 4 cloves garlic, minced
  • 3 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse shrimp, scallops, and fish fillets under cold water. Pat them dry with paper towels to remove excess moisture.
  2. In a bowl, combine olive oil, minced garlic, lemon juice, chopped parsley, salt, and pepper. Toss all seafood in this marinade until coated. Let it sit while the pan heats.
  3. Place a large skillet over medium-high heat and drizzle with olive oil. Allow it to get hot but not smoking.
  4. Add shrimp first; sauté for about two minutes before adding scallops and fish fillets. Cook everything together until opaque and cooked through—about another five minutes.
  5. Transfer seafood onto a serving platter. Drizzle with any leftover marinade from the pan and garnish with fresh herbs.
  6. Squeeze more lemon juice over the dish if desired. Serve immediately alongside crusty bread or a fresh garden salad.
