Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) for even cooking.
- Prepare Your Baking Sheet: Line a large sheet pan with parchment paper or lightly spray it with nonstick cooking spray.
- Chop the Vegetables: Slice the bell peppers, zucchini, and red onion into bite-sized pieces. In a bowl, toss them with 2 tablespoons of olive oil, salt, pepper, and any herbs you prefer.
