Ingredients

  • 1 ½ cups granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup unsalted butter (softened)
  • 4 large eggs
  • 1 cup milk
  • 2 cups fresh berries (strawberries, blueberries, raspberries)
  • 1 cup heavy whipping cream
  • ¼ cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two round cake pans with butter or nonstick spray.
  2. In a medium bowl, mix together flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until fluffy (about 3 minutes).
  4. Add the eggs one at a time to the butter-sugar mixture, mixing well after each addition. Gradually add the milk until fully combined.
  5. Gently fold in the dry ingredients until just combined. Carefully fold in the berries.
  6. Divide the batter evenly between prepared pans and bake for 25–30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  7. Let cool completely before removing from pans.
  8. In a separate bowl, whip together heavy whipping cream and powdered sugar until soft peaks form.
