- 4 thick slices of brioche or challah bread
- 1 cup full-fat coconut milk
- 2 large eggs
- 1 tsp pure vanilla extract
- 1 tbsp sugar
- 1/2 cup unsweetened shredded coconut
- 2 tbsp butter (for cooking)
Instructions
- In a medium bowl, combine coconut milk, eggs, sugar, and vanilla extract. Whisk until smooth.
- Dip each slice of bread into the egg mixture, coating both sides evenly. Allow them to soak briefly.
- In a large skillet over medium heat, melt butter until bubbly.
- Place the soaked bread slices in the skillet. Cook each side for about 3 minutes until golden brown.
- During the last minute of cooking, sprinkle shredded coconut on top and flip carefully to toast both sides.
- Transfer to plates and serve warm with your choice of fresh fruit or syrup.
