  • 2 large eggs

  • 1 tbsp sugar
  • 1/2 cup unsweetened shredded coconut
  • 2 tbsp butter (for cooking)

Instructions

  1. In a medium bowl, combine coconut milk, eggs, sugar, and vanilla extract. Whisk until smooth.
  2. Dip each slice of bread into the egg mixture, coating both sides evenly. Allow them to soak briefly.
  3. In a large skillet over medium heat, melt butter until bubbly.
  4. Place the soaked bread slices in the skillet. Cook each side for about 3 minutes until golden brown.
