Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray it with non-stick cooking spray.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- Combine Wet Ingredients: In another bowl, beat the eggs and milk together. Stir in the almond extract until smooth.
- Bring It Together: Pour the wet mixture into the dry ingredients and mix gently until just combined—lumpy batter is preferred to avoid tough muffins.
- Fold in Cherries: Gently fold in the cherries and half of the sliced almonds without squishing them.
- Bake: Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full. Top with remaining sliced almonds for added crunch. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
