Description

Indulge in the delightful combination of nutty almond and sweet cherries with these scrumptious muffins, perfect for breakfast or a satisfying snack!

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tsp almond extract
  • ¾ cup milk (dairy or non-dairy)
  • 2 large eggs
  • 1 cup fresh or frozen pitted cherries
  • ¼ cup sliced almonds (for topping)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray it with non-stick cooking spray.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. Combine Wet Ingredients: In another bowl, beat the eggs and milk together. Stir in the almond extract until smooth.
  4. Bring It Together: Pour the wet mixture into the dry ingredients and mix gently until just combined—lumpy batter is preferred to avoid tough muffins.
  5. Fold in Cherries: Gently fold in the cherries and half of the sliced almonds without squishing them.
  6. Bake: Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full. Top with remaining sliced almonds for added crunch. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
  7. Enjoy: Let cool slightly before removing from the pan. Enjoy warm or at room temperature!
