Ingredients

  • 1 lb ground turkey
  • 2 cups cooked rice (white or brown)
  • 1 cup bell peppers, sliced (mixed colors)
  • 1 cup carrots, thinly sliced
  • 2 green onions, chopped
  • 1/4 cup low-sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp ground ginger

Instructions

  1. In a large skillet over medium heat, add a drizzle of oil.
  2. Add ground turkey and cook until browned, breaking it apart (about 5 minutes).
  3. Stir in sliced bell peppers and carrots; cook for another 5 minutes until veggies soften but remain crunchy.
  4. In a small bowl, combine soy sauce, brown sugar, garlic powder, and ground ginger. Mix until sugar dissolves.
  5. Pour the sauce over the turkey and veggie mixture in the skillet.
  6. Stir to coat evenly and simmer for another couple of minutes.
  7. Place cooked rice in bowls and top with the teriyaki turkey mix.
  8. Garnish with chopped green onions.
