- 2 cups cooked rice (white or brown)
- 1 cup bell peppers, sliced (mixed colors)
- 1 cup carrots, thinly sliced
- 2 green onions, chopped
- 1/4 cup low-sodium soy sauce
- 3 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp ground ginger
Instructions
- In a large skillet over medium heat, add a drizzle of oil.
- Add ground turkey and cook until browned, breaking it apart (about 5 minutes).
- Stir in sliced bell peppers and carrots; cook for another 5 minutes until veggies soften but remain crunchy.
- In a small bowl, combine soy sauce, brown sugar, garlic powder, and ground ginger. Mix until sugar dissolves.
- Pour the sauce over the turkey and veggie mixture in the skillet.
- Stir to coat evenly and simmer for another couple of minutes.
- Place cooked rice in bowls and top with the teriyaki turkey mix.
- Garnish with chopped green onions.
