- 1.5 lbs boneless, skinless chicken thighs
- 3 garlic cloves, minced
- 1-inch piece fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 1 cup cornstarch
- Salt and pepper to taste
- Vegetable oil (for frying)
- 1/2 cup mayonnaise
- 1 tbsp spicy mustard (adjust to taste)
Instructions
- Cut chicken thighs into bite-sized pieces.
- In a mixing bowl, combine soy sauce, minced garlic, and grated ginger.
- Add the chicken pieces to the marinade and let it sit for at least 30 minutes.
- In another bowl, mix cornstarch with salt and pepper.
- Heat vegetable oil in a deep skillet or pot until it reaches 350°F (175°C).
- Remove chicken from marinade and coat each piece in the cornstarch mixture.
- Fry chicken pieces in batches until golden brown and cooked through, about 4–5 minutes per side.
- Use a slotted spoon to remove chicken from oil and place on paper towels to drain excess oil.
- In a small bowl, mix mayonnaise with spicy mustard until well combined.
