Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 1 cup cornstarch
  • Salt and pepper to taste
  • Vegetable oil (for frying)
  • 1/2 cup mayonnaise
  • 1 tbsp spicy mustard (adjust to taste)

Instructions

  1. Cut chicken thighs into bite-sized pieces.
  2. In a mixing bowl, combine soy sauce, minced garlic, and grated ginger.
  3. Add the chicken pieces to the marinade and let it sit for at least 30 minutes.
  4. In another bowl, mix cornstarch with salt and pepper.
  5. Heat vegetable oil in a deep skillet or pot until it reaches 350°F (175°C).
  6. Remove chicken from marinade and coat each piece in the cornstarch mixture.
  7. Fry chicken pieces in batches until golden brown and cooked through, about 4–5 minutes per side.
  8. Use a slotted spoon to remove chicken from oil and place on paper towels to drain excess oil.
  9. In a small bowl, mix mayonnaise with spicy mustard until well combined.
