Crispy Japanese Fried Chicken (Chicken Karaage) is a delightful dish featuring juicy marinated chicken coated in a crunchy batter, perfect for any occasion.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 1 tbsp fresh ginger, grated
  • 3 garlic cloves, minced
  • 1/2 cup potato starch
  • Vegetable oil for frying
  • 1/2 cup mayonnaise
  • 2 tbsp yuzu juice

Instructions

  1. Cut chicken thighs into bite-sized pieces. In a bowl, combine soy sauce, grated ginger, and minced garlic. Add chicken and marinate for at least 30 minutes.
  2. Place potato starch in a separate bowl. Toss marinated chicken pieces in the potato starch until well-coated.
  3. In a heavy-bottomed pot or deep skillet, heat vegetable oil over medium-high heat until it reaches about 350°F (175°C).
  4. Carefully add coated chicken pieces to the hot oil in batches, frying until golden brown and crispy—about 3 to 5 minutes per side. Use a slotted spoon to transfer them to paper towels.
  5. In a small bowl, mix mayonnaise with yuzu juice until smooth.
  6. Serve crispy chicken with dipping sauce on the side and lemon wedges for added zest.
