- 1.5 lbs boneless, skinless chicken thighs
- 1/4 cup soy sauce
- 1 tbsp fresh ginger, grated
- 3 garlic cloves, minced
- 1/2 cup potato starch
- Vegetable oil for frying
- 1/2 cup mayonnaise
- 2 tbsp yuzu juice
Instructions
- Cut chicken thighs into bite-sized pieces. In a bowl, combine soy sauce, grated ginger, and minced garlic. Add chicken and marinate for at least 30 minutes.
- Place potato starch in a separate bowl. Toss marinated chicken pieces in the potato starch until well-coated.
- In a heavy-bottomed pot or deep skillet, heat vegetable oil over medium-high heat until it reaches about 350°F (175°C).
- Carefully add coated chicken pieces to the hot oil in batches, frying until golden brown and crispy—about 3 to 5 minutes per side. Use a slotted spoon to transfer them to paper towels.
- In a small bowl, mix mayonnaise with yuzu juice until smooth.
- Serve crispy chicken with dipping sauce on the side and lemon wedges for added zest.
