- 1 lb boneless chicken thighs
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/4 cup low-sodium soy sauce
- 1/2 cup potato starch or cornstarch
- Vegetable oil (for frying)
Instructions
- Cut chicken thighs into bite-sized pieces. In a bowl, combine soy sauce, garlic, and ginger. Add the chicken and marinate for at least 30 minutes.
- After marinating, remove chicken from the bowl and let excess marinade drip off. Place potato starch or cornstarch in a separate bowl and coat each piece of chicken thoroughly.
- In a deep pan or pot, heat enough vegetable oil to submerge the chicken pieces halfway (about 350°F or 175°C).
- Carefully place coated chicken pieces into hot oil without overcrowding. Fry for about 5-7 minutes until golden brown and crispy.
- Remove chicken using tongs or a slotted spoon and let it drain on paper towels.
- Serve immediately while warm with lemon wedges and dipping sauces if desired.
