Ingredients

  • 1 lb boneless chicken thighs
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup potato starch or cornstarch
  • Vegetable oil (for frying)

Instructions

  1. Cut chicken thighs into bite-sized pieces. In a bowl, combine soy sauce, garlic, and ginger. Add the chicken and marinate for at least 30 minutes.
  2. After marinating, remove chicken from the bowl and let excess marinade drip off. Place potato starch or cornstarch in a separate bowl and coat each piece of chicken thoroughly.
  3. In a deep pan or pot, heat enough vegetable oil to submerge the chicken pieces halfway (about 350°F or 175°C).
  4. Carefully place coated chicken pieces into hot oil without overcrowding. Fry for about 5-7 minutes until golden brown and crispy.
  5. Remove chicken using tongs or a slotted spoon and let it drain on paper towels.
  6. Serve immediately while warm with lemon wedges and dipping sauces if desired.
