  2. Mix in Cheese: In a large bowl, combine the mashed potatoes with shredded cheese and mix well. Add herbs if desired for extra flavor.
  3. Form the Balls: Using your hands, shape about two tablespoons of potato mixture into balls and place them on a lined baking sheet.
