- Prepare the Mashed Potatoes: If starting with fresh potatoes, peel and chop them into chunks. Boil until fork-tender (about 15-20 minutes), then mash thoroughly with butter and seasoning. If using leftovers, grab those.
- Mix in Cheese: In a large bowl, combine the mashed potatoes with shredded cheese and mix well. Add herbs if desired for extra flavor.
- Form the Balls: Using your hands, shape about two tablespoons of potato mixture into balls and place them on a lined baking sheet.
- Coat the Balls: In one bowl, beat the eggs until frothy; in another bowl, combine breadcrumbs with salt and pepper. Dip each ball into the egg wash followed by rolling it in breadcrumbs until fully coated.
