- 8 oz mascarpone cheese
- 1 cup brewed espresso (cooled)
- 12 ladyfingers (crushed)
- 1/2 cup powdered sugar
- 6 oz dark chocolate (melted)
- 2 tbsp cocoa powder (for dusting)
Instructions
- In a mixing bowl, combine mascarpone cheese and powdered sugar. Add half of the cooled espresso and mix until smooth.
- Fold in the crushed ladyfingers and remaining espresso until well combined.
- Cover and chill the mixture in the refrigerator for at least 1 hour.
- After chilling, scoop out about one inch of the mixture and roll into balls between your palms until smooth.
- Melt dark chocolate in a microwave or double boiler until smooth.
- Dip each truffle into melted chocolate, allowing excess to drip off, then roll in cocoa powder.
- Place on a plate and refrigerate until set.
