- 8 oz spaghetti (or pasta of choice)
- 2 cloves fresh garlic, minced
- 2 tbsp lemon juice (freshly squeezed)
- 3 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 cup halved cherry tomatoes (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- 1. Cook the Pasta: Boil water in a large pot. Add a pinch of salt and toss in the spaghetti. Cook according to package instructions until al dente, approximately 8–10 minutes.
- 2. Prepare the Sauce: While the pasta cooks, cut open the ripe avocados and scoop their flesh into a blender or food processor. Add minced garlic, lemon juice, olive oil, salt, and pepper.
- 3. Blend It Up: Blend until smooth, scraping down the sides as necessary for an even consistency.
- 4. Combine Pasta and Sauce: Once cooked, drain the pasta without rinsing it to retain some starch. Transfer it to a large bowl and pour over the creamy avocado sauce.
- 5. Mix It Up: Toss gently until every noodle is coated with the sauce. If too thick, add a splash of reserved pasta water to reach desired consistency.
- 6. Serve and Enjoy: Plate the creamy avocado pasta and top with halved cherry tomatoes or grated Parmesan if desired. Serve immediately.
