- 8 oz spaghetti or penne
- 2 ripe avocados
- 2 cloves fresh garlic, minced
- 2 tbsp freshly squeezed lemon juice
- 1/2 cup grated parmesan cheese
- Salt and pepper to taste
- 1/4 cup fresh basil, chopped
Instructions
- Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve half a cup of pasta water before draining.
- While the pasta is cooking, scoop the avocados into a blender. Add minced garlic, lemon juice, salt, pepper, and half of the parmesan cheese. Blend until smooth.
- Add the drained pasta directly into the blender with the avocado sauce. Blend until well combined. If necessary, add reserved pasta water gradually to reach desired consistency.
- Stir in chopped basil and any remaining parmesan cheese until evenly distributed.
- Plate the creamy avocado pasta immediately, garnishing with extra basil and parmesan if desired.
