Description

Creamy Avocado Pasta is a quick, nutritious dish that marries ripe avocados with al dente pasta for a delightful, velvety experience that everyone will love.


Ingredients

  • 8 oz spaghetti or penne
  • 2 ripe avocados
  • 2 cloves fresh garlic, minced
  • 2 tbsp freshly squeezed lemon juice
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped

Instructions

  1. Boil a large pot of salted water. Add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve half a cup of pasta water before draining.
  2. While the pasta is cooking, scoop the avocados into a blender. Add minced garlic, lemon juice, salt, pepper, and half of the parmesan cheese. Blend until smooth.
  3. Add the drained pasta directly into the blender with the avocado sauce. Blend until well combined. If necessary, add reserved pasta water gradually to reach desired consistency.
  4. Stir in chopped basil and any remaining parmesan cheese until evenly distributed.
  5. Plate the creamy avocado pasta immediately, garnishing with extra basil and parmesan if desired.
