- 2 tbsp olive oil
- 1 medium yellow onion, chopped
- 2 medium carrots, sliced
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 6 cups low-sodium vegetable broth
- 1 can (14 oz) diced tomatoes
- 4 cups mixed vegetables (fresh or frozen)
- 1 tbsp Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add olive oil. Once shimmering, sauté the onion, garlic, carrots, and celery for about 5 minutes until softened.
- Pour in the vegetable broth and diced tomatoes (juice included). Stir well to combine.
- Add in the mixed vegetables of your choice. Let simmer for about 10 minutes.
- Sprinkle Italian seasoning over the soup. Season with salt and pepper to taste and simmer for another 10 minutes.
- Taste and adjust seasonings as desired.
- Serve hot with crusty bread or croutons.
