  • 2 bay leaves
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté the chopped onion, carrots, and celery until softened and fragrant, about 5 minutes.
  2. Stir in the minced garlic and cook for another minute until aromatic.
  3. Add the rinsed split peas and vegetable broth to the pot. Stir well.
  4. Toss in the bay leaves and bring the mixture to a gentle boil. Reduce heat to low.
  5. Allow the soup to simmer uncovered for about 60 minutes or until the peas are soft enough to break apart easily. Stir occasionally to prevent sticking.
  6. Remove bay leaves before serving. Adjust seasoning with salt and pepper as desired.
