- 2 medium carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 2 bay leaves

- Salt and pepper to taste
Instructions
- In a large pot over medium heat, add olive oil. Once hot, sauté the chopped onion, carrots, and celery until softened and fragrant, about 5 minutes.
- Stir in the minced garlic and cook for another minute until aromatic.
- Add the rinsed split peas and vegetable broth to the pot. Stir well.
- Toss in the bay leaves and bring the mixture to a gentle boil. Reduce heat to low.
- Allow the soup to simmer uncovered for about 60 minutes or until the peas are soft enough to break apart easily. Stir occasionally to prevent sticking.
- Remove bay leaves before serving. Adjust seasoning with salt and pepper as desired.
