Ingredients

  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix until just blended.
  2. Shape the mixture into meatballs about one inch in diameter.
  3. In a large pot over medium heat, add oil and brown meatballs on all sides for about five minutes. Remove and set aside.
  4. In the same pot, add carrots and celery; sauté for about five minutes until softened.
  5. Pour in chicken broth and diced tomatoes; bring to a gentle boil while scraping the bottom of the pot.
  6. Return meatballs to the pot; reduce heat to low and let simmer for about twenty minutes.
  7. Taste and adjust seasonings if needed; serve hot with crusty bread or crackers.
