- 1 lb lean ground beef
- 1/2 cup breadcrumbs
- 1 large egg
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 2 medium carrots, sliced
- 2 stalks celery, chopped
Instructions
- In a large mixing bowl, combine ground beef, breadcrumbs, egg, onion, garlic, salt, and pepper. Mix until just blended.
- Shape the mixture into meatballs about one inch in diameter.
- In a large pot over medium heat, add oil and brown meatballs on all sides for about five minutes. Remove and set aside.
- In the same pot, add carrots and celery; sauté for about five minutes until softened.
- Pour in chicken broth and diced tomatoes; bring to a gentle boil while scraping the bottom of the pot.
- Return meatballs to the pot; reduce heat to low and let simmer for about twenty minutes.
- Taste and adjust seasonings if needed; serve hot with crusty bread or crackers.
