Ingredients
Scale
- 1 cup dried black-eyed peas (or 2 cans, drained and rinsed)
- 1 medium yellow onion, diced
- 2 stalks celery, chopped
- 2 medium carrots, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 tsp cayenne pepper (adjust to taste)
- Optional: Fresh parsley or green onions for garnish
Instructions
- Sauté Aromatics: In a large pot over medium heat, add a splash of olive oil. Sauté the diced onion, celery, and carrots until softened (about 5 minutes). Stir in the minced garlic and cook until fragrant.
- Add Black-Eyed Peas: Add the black-eyed peas to the pot and stir well to combine with the sautéed veggies.
- Pour in Broth: Pour in the chicken broth and bring the mixture to a gentle boil. Sprinkle in cayenne pepper according to your desired spice level.
- Simmer: Reduce the heat to low and cover the pot. Let it simmer for about 40 minutes or until the peas are tender and creamy. Stir occasionally.
- Taste & Adjust: After simmering, remove the lid and taste the soup. Adjust seasoning if necessary.
