- 2 cups fresh corn kernels (or frozen)
- 1 medium onion, diced
- 2 Yukon Gold potatoes, diced
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream (or half-and-half)
- 6 slices turkey bacon, cooked and chopped
- Salt and pepper to taste
- Fresh chives or parsley for garnish
Instructions
- In a large pot over medium heat, cook the turkey bacon until crispy. Remove from the pot and let cool before chopping into bite-sized pieces. Leave the drippings in the pot.
- Add the diced onion to the pot with drippings and sauté until translucent, about 5 minutes.
- Stir in the diced Yukon Gold potatoes and add the vegetable broth. Bring to a gentle boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add the corn kernels to the pot and continue cooking for another 5 minutes.
- Pour in the heavy cream while stirring constantly. Let simmer for an additional minute or two, then season with salt and pepper to taste.
- Return the crispy turkey bacon bits to the chowder just before serving. Garnish with fresh chives or parsley for a pop of color.
