- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 2 tbsp chili powder
- Salt and pepper to taste
- 1 package (8.5 oz) cornbread mix
- 1 cup water or milk (as per package instructions)
- 1 cup shredded cheddar cheese
- Sour cream, for serving
- Sliced green onions, for serving
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add kidney beans, diced tomatoes with juices, chili powder, salt, and pepper to the skillet. Stir well and simmer for 10 minutes.
- In a separate bowl, prepare cornbread mix according to package instructions using water or milk.
- Spread the chili mixture evenly in a greased baking dish.
- Pour the prepared cornbread batter over the chili mixture, spreading gently.
- Sprinkle shredded cheese on top.
- Bake in preheated oven for 25-30 minutes or until cornbread is golden brown.
