  • 2 tbsp chili powder
  • Salt and pepper to taste
  • 1 package (8.5 oz) cornbread mix
  • 1 cup water or milk (as per package instructions)
  • 1 cup shredded cheddar cheese
  • Sour cream, for serving
  • Sliced green onions, for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  3. Add kidney beans, diced tomatoes with juices, chili powder, salt, and pepper to the skillet. Stir well and simmer for 10 minutes.
  4. In a separate bowl, prepare cornbread mix according to package instructions using water or milk.
  5. Spread the chili mixture evenly in a greased baking dish.
  6. Pour the prepared cornbread batter over the chili mixture, spreading gently.
  7. Sprinkle shredded cheese on top.
