- 3–4 boneless, skinless chicken breasts
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 medium onion, diced
- 3 garlic cloves, minced
- 8 oz egg noodles
- 8 cups low-sodium chicken broth
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Chop the vegetables into bite-sized pieces. Dice the onion, slice the carrots and celery thinly, and mince the garlic.
- In a large pot over medium heat, add about 1 tbsp oil. Sauté the chopped onion and minced garlic for two minutes until fragrant. Add the chicken breasts and cook until browned on both sides (about five minutes each side).
- Stir in the carrots, celery, thyme, bay leaf, and pour in the chicken broth. Bring to a boil then reduce heat to simmer for about twenty minutes.
- After twenty minutes, add the egg noodles to the pot. Cook according to package instructions (usually around seven minutes) until tender but still al dente.
- Remove cooked chicken from the pot using tongs or a slotted spoon. Shred it into bite-sized pieces using two forks and return it to the soup.
- Once everything is well combined and heated through (about another five minutes), ladle into bowls and garnish with fresh parsley if desired.
