  • 34 boneless, skinless chicken breasts
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 8 oz egg noodles
  • 8 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Chop the vegetables into bite-sized pieces. Dice the onion, slice the carrots and celery thinly, and mince the garlic.
  2. In a large pot over medium heat, add about 1 tbsp oil. Sauté the chopped onion and minced garlic for two minutes until fragrant. Add the chicken breasts and cook until browned on both sides (about five minutes each side).
  3. Stir in the carrots, celery, thyme, bay leaf, and pour in the chicken broth. Bring to a boil then reduce heat to simmer for about twenty minutes.
  4. After twenty minutes, add the egg noodles to the pot. Cook according to package instructions (usually around seven minutes) until tender but still al dente.
  5. Remove cooked chicken from the pot using tongs or a slotted spoon. Shred it into bite-sized pieces using two forks and return it to the soup.
  6. Once everything is well combined and heated through (about another five minutes), ladle into bowls and garnish with fresh parsley if desired.
